Recipe: Key Lime Bars

I love chocolate, but key lime pie is my favorite dessert. I love the tanginess of the lime with the sweetness of the graham cracker crust and then whipped cream on top. It’s like a flavor explosion in my mouth.

The problem with pie is that I have to make at least two in order to have enough for my whole family, so this is the reason I decided to try to come up with similar flavors in a bar form. I couldn’t have the crust of a bar be graham cracker crumbs since a bar is to be eaten with just your hands, so I had to substitute there, but I have been very pleased with the result. I have not eaten these with whipped cream, although I am sure I will once I have whipped cream in the house at the same time as I have these bars in the house.

For the crust:

  • 1 cup butter
  • 2 cups flour
  • 3/4 cup powdered sugar

 

Combine these ingredients and press into a greased 9×13 pan (I find my hands work best for this. Please take the time to admire my lovely manicure). Bake for 18 minutes.

Meanwhile for the filling:IMG_3634_2

  • 2 cups sugar
  • 4 tablespoons flour
  • 1 teaspoon baking powder
  • 4 beaten eggs
  • 4 tablespoons key lime juice
  • 1/4 teaspoon salt

Combine all ingredients and mix well. Pour over crust after crust has been removed from oven. Return to oven and bake for an additional 25 minutes.

Meanwhile for the glaze:IMG_3635

  • 1 cup powdered sugar
  • just enough key lime juice to make a runny glaze, I generally end up with about 2-3 teaspoons

After removing the bars from the oven, cool slightly and then drizzle the glaze overtop. So tasty when served warm!
