Recipe: Easy Potato Salad

There are few things that say “yummy” more than a good potato salad. This one is simple and doesn’t require any ingredients that are out of the ordinary. I am very picky with my potatoes since I don’t like them at all soft in my potato salad, so you may want to vary the cooking time slightly depending on how you like your potatoes. This recipe feeds my super sized bunch.

For this recipe you will need:

  • 12 medium to large potatoes, peeled and cubed
  • 3 stalks celery
  • 1 medium onion
  • 2 large cucumbers, peeled and seeded
  • 10 sliced radishes
  • 8 hardboiled eggs, sliced

Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Boil your potatoes. Meanwhile, mix the ingredients that make up the dressing in the bowl you want to make your potato salad in. Then, chop your onions, celery, cucumbers, and radishes. Add them into the bowl with the dressing.

When the potatoes are done (I cook mine for 10 minutes beyond the boil), drain them and allow to cool slightly. Then, top with the hardboiled eggs.
