For those of you who watched my Periscope broadcast this morning, I promised you a potato salad recipe. Well, when someone spills your bowl full of chopped ingredients all over the garage floor and you don’t have any extra, creating that recipe becomes a problem. I am so sorry. I will get this recipe for potato salad up within in the next few days, but I do have to do the grocery shopping first.

So you know this recipe is a keeper when your husband who is a very picky eater likes it.  It’s funny because he generally likes nothing homemade, and cole slaw is something he grew up eating with the bottled slaw sauce.

The first time I made this I didn’t intend to tell him it was homemade, but one of my kids let the cat out of the bag (hate it when they do that).  He ate it, but I really didn’t ask him his opinion since I didn’t intend on buying the jarred sauce anymore.  It is crazy expensive!  So I just continued to make it whenever we had cole slaw.  Then I got an amazing good deal on the jarred sauce recently and used that instead.  I had to laugh out loud when my husband asked me what happened with the cole slaw because it tasted so nasty!  Apparently I won him over, at least this time!

For this sauce I make it right in the bowl that I will be putting everything else in.  Make the sauce in the bowl first and then add ingredients – saves a dish ;

For this recipe you will need:

  • 1 cup mayonnaise
  • 3 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • salt and pepper to taste

It is as easy as mixing everything up and throwing in your cabbage and carrots.  I ended up using 1/2 head of cabbage and four carrots.  Easy peasy!
