Recipe: Ham, Egg, and Cheese Casserole

ham, egg, and cheese, breakfast casseroleWe had ham for dinner the other night, so I had leftover ham to use. Although we could have had another meal with it, I like to change things up a bit. This is a favorite in my family, and it is a great way to have a hot breakfast in the morning with nothing to do but pop it in the oven. Even the night before the work is minimal.

For this recipe you will need:

  • 12 eggs
  • 3 cups milk
  • 1 teaspoon dry mustard
  • 12 slices bread
  • cubed ham, I used about 2 cups
  • 8 ounces cheddar cheese
  • salt and pepper to taste

The night before, combine the eggs, milk, mustard, salt and pepper in a bowl and mix well. In a greased 9×13 pan, put down a layer of 4 pieces of bread however they fit, then another 4 pieces of bread however they fit in a different way. Then, add your ham and cheese, reserving only a small amount of cheese to sprinkle on top. Add the final 4 pieces of bread. Pour egg mixture overtop, being sure to cover all the bread so everything is well saturated. Top with remaining cheese. Bake at 350 degrees for 30-40 minutes, uncovered initially, covering after 20 minutes.
