Recipe: Mexican Wraps with Cilantro Lime Rice

I love, love, love, Mexican food and wraps, so what could be better than combining these two?! These wraps are something we love, and your family will love them, too!

Since I had leftovers on the plan for dinner tonight, and we ate the leftovers for lunch yesterday, I had to come up with something for dinner.  I had most everything on had for this, just had to grab some fresh cilantro while I was out.

This is my attempt to recreate wraps from Qdoba, which is my favorite place to eat out, but it only happens maybe once a year.  These are nice because they are easy, and like tacos, people can put in them what they want, so there is a way to please everyone all at once, which is always a winner with so many mouths to feed, two of whom I would consider to be picky eaters.

First I just make some rice according to the package directions, then to it I add:

  • 2 T of lime juice per cup of rice (I make 2 cups)
  • 2 T of fresh cilantro per cup of rice (I make 2 cups)
  • 1 tsp salt
  • 2 T coconut oil
  • sour cream (to bring it together in consistency, about 1/3 cup for me)
  • taco sauce (about 3 T, just to give it a little kick, if only making 1 cup of rice I would half that)

Then, I have the following available to choose from:

  • the rice listed above
  • black beans
  • grilled chicken
  • sour cream
  • fresh diced tomatoes
  • cilantro
  • additional sour cream
  • additional taco sauce
  • Mexican blend cheese

Everyone makes up their own, and aside from doing the prep work it is an easy meal for me.  We usually have tortilla chips, too.
