Because we homeschool, I’ve got seven kids home all day every day, which also means that I have to come up with lunch ideas that are quick and easy seven days a week. Leftovers are great, but no one really likes to eat the exact same thing, so I have come up with a few tricks on how to take some leftovers, add some creativity, and end up with something that everyone is actually willing to eat!

5 minute lunch

In keeping with my theme of sharing quick dinner ideas, I thought I would share how I transformed some leftovers from our 5 Minute Taco Meal into a new and quick lunch idea.

We had some leftover chicken, and I also had some leftover quinoa from dinner at the end of last week. With some random other things that I already had on hand, I had an entirely new and quick lunch.

This is what you will need for this quick lunch:

  • tortillas
  • chicken
  • quinoa (or rice)
  • sour cream
  • taco sauce or salsa
  • shredded cheese
  • black beans
  • guacamole

Now, I give you these ingredients cautiously, because the idea is to use whatever you have that needs to be used up or that will make this quick. You could also add things like:

  • corn
  • green onions
  • black olives
  • refried beans

and these are just the things that come to mind.

Here is what I did. I added some sour cream and taco sauce to the quinoa to give it that kick I was looking for, and then everything else just went in as people wanted it depending on their preferences. Similar to a taco bar or a pizza bar, people can make these the way they want them.

This can also be a portable lunch since wraps are something different than just a plain sandwich, yet they are also made the way you like them and easy to keep together all in one piece. Make these even the night before, throw them in a leftover container, and take it to work with you. Then, you will be the envy of all your coworkers 🙂
