Easy Eggs Benedict in a Flash!

Eggs benedict. Do you love them as much as I do? Do you love them as much as I do and hate that they are so complicated to make?

I have played around and around with hollandaise sauce until I have found a recipe that tastes great and is a snap to make. Previously to stumbling upon this concoction through trial and error, the tasting good and easy to make part never coexisted.

But, that is all a thing of the past since I now have the perfect recipe for eggs benedict, and I am so excited to share it with you! All you need is a few ingredients and a blender.

For the sauce you will need:

  • 1 stick of butter, melted
  • 3 egg yolks
  • 3/4 teaspoon lemon juice
  • 2 teaspoons water
  • pinch of sugar
  • pinch of salt
  • pinch of pepper
  • paprika for topping (optional)

For the sauce, it is as easy as throwing everything in the blender except the water. Blend everything for maybe 30 seconds or so. Then, check for consistency. Some people prefer a thicker sauce. I myself prefer in on the thinner side, so I end up adding in the entire 2 teaspoons of water. You can leave it completely out if you choose.

When your sauce is finished, prepare the rest.

I prefer my eggs benedict with

  • english muffin
  • Canadian bacon,
  • cheese
  • fried egg

Toast the english muffin, top with the bacon, cheese, and egg. Then generously smothered with hollandaise sauce.

Can I just be honest with you? I ended up staying behind with my youngest on Thanksgiving since he was in dire need of a nap. My husband took everyone else to a family gathering. This left me with the house to myself.

This recipe of eggs benedict is actually what I made myself for Thanksgiving.

Yes, it’s really that good.

  1. I love eggs Benedict, and surprisingly, I’ve never attempted it! You make it look really easy. I think I’ll try your recipe, this weekend. Do you heat the sauce?

    1. I just stick it in the micro for a bit just so it gets warm. Between the hot melted butter and a few minutes in the micro, the eggs must be enough to make it safe. No one was sick here!
