Pasta With Sausage and Leeks

This pasta with sausage and leeks is one of the more costly meals that I make, so for that reason it isn’t one that I make all that often. It is a favorite, however, so it is always such a treat when we do have it.

I do enjoy recipes that have a “fancy taste,” but aren’t really all that complicated to make. This one comes together in about 30 minutes, so that is really nice yet it also has a fancy feel to it.

For this recipe you will need:

  • 1 box of pasta, whatever cut you like
  • breakfast sausage
  • 1 cup cleaned and chopped leeks
  • 16 ounces of breakfast sausage, drained
  • 1 cup chicken stock
  • 2 cups fresh spinach
  • grated parmesan for garnish

Prepare pasta according to the package directions. At the same time, begin browning sausage in large pan. Add in leeks while sausage is nearing the end stages of the browning process. Allow the sausage and leeks to continue cooking together until leeks are translucent, maybe 10 minutes.

Next, add in the chicken stock and allow to continue simmering for an additional 15 minutes.

Finally, add in spinach. Once wilted about two minutes, you can serve. Add the parmesan cheese on each individual plate for garnish.
