Recipe: Enchilada Fajitas

enchilada fajitasIf there is one thing we love around our house, it is Mexican food. We have it on the menu plan at least once a week in one form or another, and we have yet to come across anything that we haven’t loved when we try new Mexican recipes.

This one came about when using up some leftovers. One of my best frugal tips is to not let any food go to waste, which can be surprisingly challenging at times. In addition to my pantry challenge, I keep a regular inventory of what we have in our fridge to avoid missing things that we should be eating.

So this is a cross between chicken enchiladas and chicken fajitas. I had a fair amount of leftover “stuffing” from the chicken enchiladas that I had a few days before and fajitas on my menu plan one night, so I decided to combine them into this dish.

The filling is the same is in the enchilada recipe, but I will give it to you again here:

  • 2 cans cream of chicken soup
  • 1 15 ounce container of sour cream
  • 1 large shredded chicken breast

Combine all ingredients and mix well

Spread this filling along with additional chicken and whatever other veggies you like on one soft tortilla and place on griddle. Once filled, top with another soft tortilla. We usually have the following to choose from according to each person’s likes to go inside:

  • grilled peppers and onions
  • cheese
  • artichokes

I use a large griddle so I can make two at a time, but I just put the tortillas straight on the griddle without any oil and have never had a problem.

Toppings in our family include:

  • tomato
  • black olives
  • avocado
  • lettuce
  • salsa
  • sour cream
  • taco sauce
  • cheese
  • and plenty of tortilla chips for dipping

Each one only stays on the griddle for a couple of minutes on each side. We like ours good and crispy so they stay on a bit longer than you may like yours.

Sometimes the best recipes come about when we use what we already have to create a new spin on an old favorite.
