We love Taco Soup, and this is an easy recipe that comes together in a flash!

Since we love all things Mexican and we love all things soup, this is among our regular favorites.

The really great thing about this soup is how easy it is.  Aside from browning the beef, it is just a dump everything into the crock pot and leave it to cook.

For this recipe you will need:

  • 1 lb. browned ground beef
  • 1 large onion
  • 1 16 ounce bag of frozen corn
  • 1 28 ounce can of diced tomatoes
  • 2 cans black beans (or the equivalent of with your own)
  • 1 can kidney beans (or the equivalent of with your own)
  • 1 16 ounce jar salsa
  • 1 T cumin
  • 1 T chili powder
  • 1 T salt
  • sour cream for serving
  • cheddar cheese for serving
  • cilantro for garnish
  • tortilla chips for garnish

After browning the beef with the onion, add to the crock pot with everything else that you’ve already thrown in there.  Cook on low for 8- 10 hours.  Serve with the sour cream, cheese, cilantro, and chips.

It’s all about systems. When people ask how we can stay on top of things in our home, systems is always my answer. There is a system for everything. Including the Christmas tree. Nothing ever goes exactly as planned, but a system helps keep you on top rather than feeling like you’re always swallowed up by the crazy. Life can be easier. It’s all about coming up with systems based on what isn’t working. So, you figure out how to make it work better. And you try it. See how it goes.

This year is the year our Christmas tree system is finally brilliant. It’s only been 5+ years in the making.

What systems would make your life easier? I share mine all the time in case they’ll help you.

My favorite Christmas gift. One of my daughters ha My favorite Christmas gift. One of my daughters hand lettered this for me. She chose this verse for me - she knows it’s a verse I need to sear into my heart. Then she put it in this frame. Now, it is the most important thing on my desk. This might be the most treasured possession I ever have.
