Breakfast Fries

Breakfast fries are an amazing way to spruce up your breakfast table, and this recipe couldn’t be easier. I’m all about cooking that is easy, in fact, since I have a large family to feed. Having a family of nine also means that feeding a family frugally is a necessity, and potatoes are one of the ways we do that. There are literally thousands of ways to prepare potatoes, and they can even be added into a breakfast meal.

This recipe comes together in a flash, and because it cooks at a high temperature, it cooks quickly, too.

We actually had breakfast for dinner last night, and these breakfast fries were a tasty addition to the table.

For this recipe you will need:

  • 5-6 medium potatoes, scrubbed and cubed into smaller pieces
  • 3 Tablespoons butter
  • 1/2 teaspoon Herbes de Provence
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Preheat oven to 500 degrees. Melt butter and spread over the bottom of a jelly roll pan (I use these as cookie sheets). Spread potatoes onto jelly roll pan in a single layer and cover with herbs de provence, salt, and pepper. Toss lightly. When oven comes to temperature, place in oven and bake for 18-23 minutes, turning halfway through. Remove from oven when desired color and crispiness is achieved.
