We’ve got muffins on our breakfast plan this week. I think it is easy to think that things like muffins are a big deal to make, but in reality they really can be whipped up in no time. I make these so often that I can say these can each be made in about 1o minutes at the most.
Actually, that time can really be even faster than that if you enlist the help of your kids. I have a meal prepare helper at each meal, and this is the perfect job for them.
I have my breakfast prepare helper get out all the ingredients for me ahead of time, then all I have to do is walk into the kitchen to make them. The helper is also responsible for the cleanup. You can even have a child get the things out and ready the night before if the mornings are too hectic.
One thing I did and continue to do that works out so well for me is to train my girls to cook and bake early on. My oldest daughter at 14 can make anything, follow any recipe, and do whatever needs to be done whether it is grating things, separating eggs, using the blender or food processor, or just about anything else that comes to mind including using me large chef’s knife to cut things.
My second daughter is 11, and she is well on her way to mastering these skills. My youngest daughter at 8 shadows them in the kitchen, and also me as well. Training need not be anything more than just explaining as you go at times.
These are what we are having today, and these blueberry muffins are AMAZING!

I have 2 muffin tins, which helps greatly when feeding a larger group, but I got by with one for years.
