Looking for an amazing and easy salad that showcases all things summer? This is the most amazing salad I have ever had. My gourmet cooking sis made it for me when I was visiting her one time, and so this summer also reminds me of my sis and the fun we had. Isn’t it amazing how food can take us back in time like that?
Anyhow, I do alter this recipe just a bit, which you can see in the picture.
- I generally don’t have green onions on hand, nor are they something anyone else in my family will eat so I substitute red onions. Remember when I spoke of 15 frugal tips? Substituting more user-friendly and inexpensive ingredients was one of those tips.
- I use red quinoa, too, simply because that seems to be easier to find in the stores near me. This is the one I LOVE:Nature’s Earthly Choice Organic Red Quinoa, 6 x 12 Ounce
