We are lovers of all Mexican foods in our house. For this reason we are constantly trying new things. We love taking things and putting our own spin on them. With so many mouths to feed and a tight food budget, we most commonly make changes to recipes that make them super frugal options. These burrito bowls are super easy, super frugal, and super delicious!

The nice thing about meals like this one is that each person can add the toppings they prefer. Having plenty of options available means that there will be things that everyone loves. My little kids prefer more simple bowls, but I have several kids (and myself) who love everything!

For this recipe you will need:

  • rice (we prefer to flavor our rice using more Mexican flavors. You can find my spicy cilantro rice HERE)
  • shredded chicken (this becomes super easy when you just pull it out of the freezer, all ready to go. Read more about my freezer staples HERE)
  • black beans
  • corn
  • tomatoes, chopped
  • green peppers, chopped
  • shredded cheese (any flavor will do, but we love Mexican cheese)
  • pico de gallo (find my recipe for pico de gallo HERE)
  • sour cream
  • cilantro

Prepare your rice to your liking. In a typical burrito bowl, the rice goes on the bottom. After that, the toppings each person chooses go right on top of the rice. In our house, there are rarely leftovers, but if there are these are great for a quick lunch as well.
