I love a good pico de gallo. I like to eat it with chips, and I like to put a few dollops on as a garnish on a Mexican dish of nearly any kind. Honestly, this one is so good I’ve eaten it with a spoon!

But like most of the recipes here, it needs to be quick, it needs to be easy, and it ideally needs to use ingredients that I already have on hand.

And in addition to all of that, it tastes AMAZING!

Here is how I make zesty pico de gallo.

For this recipe you will need:

  • 3 medium tomatoes, chopped
  • 1/2 large red onion, chopped
  • 1 large green pepper, chopped
  • 1 Tablespoon extra virgin olive oil
  • 2 teaspoons Italian dressing mix, like this one HERE
  • 1/2 teaspoon lime juice
  • 2 Tablespoons chopped cilantro (optional)

This recipe is as simple as chopping everything and throwing it all together. I say to give it at least to hours for all the flavors to meld together well. I find the longer in sits, the better it gets!
