goulashGoulash. Where did this name come from? I have no idea, it really is a crazy name, but it really is something that is crazy good.

My mom made this when I was a kid, and I am not sure if she made it the same way, but this is the way that I make it, and of course my recipe makes enough to feed a crowd…or to give you plenty of leftovers, which only get better over time.

This recipe most likely uses ingredients that you already have on hand, and they can be adjusted to the way that your family likes them. Things like the mushrooms and celery are optional, and you can even use less or more tomatoes than what the recipe calls for. Essentially, there really is no wrong way to make this dish.

Here’s how I do it.

For this recipe you will need:

  • 1 16 ounce box of elbow macaroni
  • 1 pound ground beef
  • 1 medium onion
  • 2 stalks celery
  • 2 16 ounce cans tomatoes
  • 2 10 ounce cans tomato sauce
  • mushrooms (optional – I used one 10 ounce bag of frozen sliced mushrooms)
  • parmesan cheese (for topping and also optional)

Prepare pasta according to package directions while browning ground beef. Meanwhile, chop the onions and celery while grabbing the rest of the ingredients. Once the meat is browned, add in the onions and celery and simmer for about five minutes until tender. Add in everything else including the cooked pasta and let simmer for 30 minutes. Top with parmesan cheese if desired.
