Chili Cheese Dog Soup

Chili cheese dog soup is a winner here for various reasons. I like it because it is hearty and frugal to make, and although it’s not really the healthiest of soups, the kids LOVE it. What’s not to love, actually?!

We eat soup at least twice a week except for during the hottest months of the summer, because they are an inexpensive way to feed a crowd, which is what I have to feed. Pair any soup with some french bread or breadsticks, and you’ve got an amazing meal that usually yields leftovers even in my home. This really makes it a win/win!

This is also a great recipe because it can be made in your crock pot, or on the stove if you prefer. There is a rather large list of ingredients, but it really is just a bunch of cans that you dump in. I love dump recipes!

For this recipe you will need:

  • 1 pound ground beef
  • 1 large chopped onion
  • 4 cloves minced garlic
  • 3 15 ounce cans diced tomatoes
  • 2 15 ounce cans chili, with or without beans
  • 2 15 ounce cans refried beans
  • 1 6 ounce can tomato paste
  • 5 cups water
  • 3 Tablespoons ketchup
  • 2 Tablespoons mustard
  • 1 Tablespoon lemon juice
  • 1 Tablespoon salt
  • 1/2 tablespoon pepper
  • 1 1/2 Tablespoons chili powder
  • 2 packs hot dogs
  • 8 ounces shredded cheddar cheese
  • sour cream for topping (optional)

Brown ground beef, drain, and add to crock pot. Add onions and let soften for 3-5 minutes. Add garlic and cook for 1 minute. Add remaining ingredients except for the hot dogs and cheese. Cook in slow cooker on high for 4 hours or on low for 6-8 hours.

About 30 minutes before serving, add sliced hot dogs and cheese.
