Easy as Pie Apple Crisp

Because we go apple picking every year, we love having apple treats, and this apple crisp is our favorite recipe. It’s so easy, and with a pie tasting twist it is a tasty variation on a commonly loved fall treat.

This recipe has plenty of topping, and we serve it with ice cream and caramel. Although it may not be that healthy, it certainly is loved! After all, who counts calories this time of the year?

My two girls, (age 12 and 9) actually made this recipe this time around. We love cooking together in the kitchen, and spending time in the kitchen with your kids is a great way to be intentional. Just don’t worry about the mess, you can always clean it up.

For this recipe you will need:

  • 8 sliced apples (use a firm apple like an Ida Red or a Jona Gold)
  • 1 1/2 cup brown sugar
  • 1 cup old fashioned oats
  • 3/4 cups flour
  • 2 teaspoons vanilla
  • 1 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 cup cold butter
  • ice cream for topping (optional)
  • caramel for topping (optional)

Preheat oven to 375 degrees. Wash and slice your apples. Place them in a 9×13 pan sprayed with cooking spray. In a bowl, combine all the dry ingredients (not the vanilla or butter). Mix them all together well. Then, add the vanilla and cold butter cut into small sugar cube sized cubes. Mix together until crumbly. Just get in there and use your hands 🙂

Here’s a trick: cut your butter into the little cubes and then pop them in the freezer before using them!

Put the crumbly over the apples and bake for 40-45 minutes. Serve warm with ice cream and caramel if desired.
