Summer Salsa With Fresh Fruit

Oh my. I couldn’t come up with what to call this because it is just filled with so many different flavors that it is impossible to choose just one flavor to focus on. It is the perfect mixture of sweet and tang with just the right amount of sassiness to make you want to eat the whole batch while hiding in your closet. Oh yes, it really is that good!

So versatile, you can eat it with tortilla chips or pita chips, you can use it to put over the top of chicken, pork, or fish, or you can even do what I do sometimes…just eat it!

With all the freshness of summer combined in the same bowl, this will be a favorite in your home, too. This summer salsa is truly to die for!

For this recipe you will need:

  • 1/2 of medium, seedless watermelon
  • 1 mango, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red onions, chopped
  • 1/3 cup fresh finely chopped cilantro
  • 1 lime
  • pinch of salt

It really is as simple as chopping all of the ingredients, squeezing the juice of one lime over the top, adding a pinch of salt, and mixing it all together.

You can serve it right away if you choose, but it’s better with at least two hours to just sit and all get friendly together. And the best part is that it gets even better and better the longer it sits…even three or four days. If you want it to last that long, however, I’d triple the batch!
